How to Dehydrate Cucumbers:

Dehydrated cucumbers are both versatile and easy! They are truly a staple in food dehydration and storage because they can be used in numerous recipes: from delicious cucumber bread and vibrant vegetable soups, to a simple on-the-go snack.

Dehydrated cucumber chips are a favorite of ours, as they are a no hassle and healthy snack. These dried vegetable chips have 85% less calories and 99% less saturated fat than traditional store-bought potato chips of the same size, and are also less expensive. Who said it’s no easy to stay healthy while on the go and on a budget?

Instructions:

  • Cucumbers must first be blanched to remove the waxy coating. To do this, bring water to a boil then submerge the whole cucumber for exactly 30 seconds.
  • Remove from water, and then horizontally slice into 1/8 thick chips.
  • Evenly spread on your dehydrator tray, and dehydrate at 125 degrees Fahrenheit for 10 hours.
  • Store in a vacuum and Mylar bag for later use in recipes, or add a dash of salt and enjoy as healthy chips!

Dryness Check:

A properly dehydrated cucumber chip will “click” when dropped on the table, will “crunch” in your mouth, and can be easily snapped in half or crumbled. If yours do not feel this way, just put them back in the dehydrator for a few more hours! If still not dry, did you forget to blanch?
